The physical shape of an enterprise SSD is now a longer-lived decision than the capacity you choose.
Drive capacities change every product cycle and nobody minds. Form factors change rarely, and when they do the cost lands on the backplane, the chassis and eventually the whole refresh plan.
U.2 remains the safe default. It is everywhere, every vendor supports it, and spares are easy to source anywhere in the world. It is also the form factor with the least headroom left for power and thermals.
U.3 looks identical and is not. A U.3 backplane accepts SAS, SATA and NVMe drives in any bay, which is genuinely useful in mixed fleets. A U.3 drive in a U.2 backplane will usually work; a U.2 drive in a U.3 bay usually will too. The trouble comes with tri-mode controllers that were not qualified for the combination, and that is a firmware question rather than a mechanical one.
E3.S is where dense new platforms are heading. It handles higher power, cools better and packs more drives into the same front panel. It also will not fit anything you already own.
